Cooking with kids…again. 😬
In an effort to keep the kids busy since our “Shelter In Place” decree, I have decided to teach them to cook and bake. One child of mine is enjoying this far more than the other. Charlotte has decided that she loves baking and asks me daily if we can make something. So, the other day, I decided to let her make chocolate chip cookies.
The poor kid has eczema thanks to her father’s faulty genetics, and the constant requests by her germaphobic mother to wash her hands while she’s in the kitchen is exacerbating the problem. Her poor hand is all raw again.
So I was going through my recipe box and found a recipe for chocolate chip cookies that looked pretty easy. I remember making them when Mady was really little and she declared they were the best ever! Perfect! The recipe calls for melted butter, so we didn’t have to wait around for the butter to get to room temperature. And Charlotte was excited to use the stand-up mixer and the stove this time.
The thing I like about cooking with kids is that they have to use their math and literacy skills to be successful at it. And it gives them a confidence boost when they present the finished product and it doesn’t look like something from that crazy 80’s Canadian game/cooking show “Just Like Mom”.
I’m finding that it’s good to mix up the activities every day while we are in quarantine. Some days the girls do a lot of art. On nice days, they get outside. Mady reads a lot and listens to music. Charlotte loves spending time with me and loves the precision of baking. So we are keeping sane. Mostly.
I think what I love about having the whole family home is being able to spend some quality time together, and long stretches of time at that. That’s not to say it’s all a bed of roses… it’s not. I miss privacy, and not having to parent all day. I miss being able to run to the store and pick up weird ingredients for some random dish I’m making for dinner. I miss my alone time. But I’m glad my family members are good humans… makes this whole thing more bearable.
Mady’s Favourite Chocolate Chip Cookies
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 egg
- 1 1/8 cups flour
- 1/2 tsp baking soda
- 12oz chocolate chips
- In a small pan, melt the butter. When it’s hot, add the sugars. Stir and let cool.
- While the butter mixture is cooling, mix the flour, soda, and salt in the mixing bowl.
- In a small bowl, best the egg lightly, then add to butter mixture. Stir.
- Now add the butter, egg, and vanilla to the flour mixture. Stir. Add chocolate chips. Stir. Cool in fridge for 45 minutes.
- Form walnut-sized balls and place on an ungreased cookie sheet. Cook 10 minutes. Cool two minutes on cookie sheet and then remove to a cooling rack.
